How does one makeover an old brick fireplace only using one product?

Short answer.....JOINT COMPOUND.
Can be found by the buckets at any home improvement store.
Just lather it on in layers. Took my about 3 buckets to achieve this look. Make sure you use a plastic trowel. If you want your finished look to have some depth and movement. Add a coloring agent to one of the middle
layers applied of joint compound
I used Roman clay in a taupey color .
